No one can speak of Indonesian food without speaking of the penyet - meat tenderized in a mortar and pestle and traditionally served with red hot sambal. Malaysia in general and the Cyberjaya region in particular has several restaurants featuring the Ayam Penyet (or smashed/squeezed chicken), of which Dapur Penyet is one. This restaurant has been around since 2009, first opening at Maju Junction Mall and slowly expanding to offer its comfort meals and fast food to ten outlets. "Dapur" is Javanese for kitchen, and from the Dapur Penyet kitchen come a variety of penyet dishes including:
