How to Prepare Delicious Pan Mee Soup

Here is our traditional pan mee soup recipe with chicken, mushrooms, and fishballs to warm up your belly. A popular Hakka noodle dish in Malaysia, this noodle dish with rich anchovy broth and vegetables can be easily made at home and enjoyed by the whole family.

Pan Mee Soup Ingredients List

  • 100g chicken meat, sliced
  • A pinch of salt and pepper
  • 1 tsp cornflour
  • 120ml oil for frying
  • 20g dried anchovies, peeled and rinsed
  • 3 shallots, sliced thinly
  • 1 packet fresh pan mee
  • 4 dried shiitake mushrooms, soaked and sliced thinly
  • 6 store-bought fish balls of your choice
  • 1 stalk mustard greens, cut into 5cm length
  • 1 handful of sweet leaves (pucuk manis)
  • Water to boil noodles and condiments

Ingredients to Prepare Pan Mee Soup:

  • 1.5l water
  • 1 anchovy stock cube
  • ¼ tsp ground white pepper
  • ¼ tsp salt or to taste
  • 1 tbsp fried shallot oil

  • 1 pot for boiling

Step by Step Instructions to Prepare Pan Mee Soup

  1. Marinate the sliced chicken in a bowl with salt, pepper and cornflour.
  2. Heat the oil in the frying pan and fry the anchovies till crispy and golden brown. Remove and set aside.
  3. In the same frying pan, fry the shallots till golden brown. Set aside both the oil and fried shallots.
  4. For the soup, boil 1.5 litres of water. Add in the anchovy stock cube, salt and white pepper. Let it cook on a low flame.
  5. Cook the pan mee noodles, chicken, sliced shiitake mushrooms in the boiling broth first and then add the fishballs, mustard greens and sweet leaves. Remove and transfer to a bowl when cooked.
  6. Pour the anchovy broth into the bowl of cooked noodles and condiments. Top with the fried anchovies, fried shallots and a tablespoon of the fried shallot oil from earlier.

Making Homemade Pan Mee Dough

When cooking our pan mee recipe, you can use either store-bought noodles or turn it into a family activity by making your own noodles. Here's what you need to do:

  1. Mix 544g of flour, 2 tablespoons of salt, and 2 eggs in a large bowl.
  2. Slowly pour 24ml of water into your flour mixture and knead for 8 to 10 minutes to form your dough.
  3. Cover your dough with a cling wrap and leave to rest for 1 hour.
  4. To cook your dough, stretch it as thin as possible into bite-size pieces and add to your broth.
