A popular traditional South-Indian dessert, kesari is commonly served during auspicious occasions, festivals, and celebrations. Made primarily from a blend of semolina, sugar, ghee, nuts, and raisins, it’s the perfect sweet treat for all. All you’ll need is 25 minutes of your time and ingredients right out of your pantry to make this kesari recipe.

Ingredients

  • 6 tbsp of ghee
  • 4 tbsp of cashews
  • 1 tbsp of raisins
  • 160g of semolina
  • 190g of sugar
  • 3 pinches of saffron strands
  • 600ml of milk
  • ½ tsp of cardamom powder

  • 1 saucepan
  • 1 steel tray

Directions

  • In a thick-bottomed pan over medium-low heat, melt the ghee.
  • Add the cashews and stir-fry them until golden. Remove and set aside.
  • Add the raisins and stir-fry until they swell. Remove and set aside.
  • Turn the heat down to low and add the semolina. Roast until fragrant, remembering to stir consistently.
  • In the meantime, in a saucepan over medium heat, add the sugar and saffron strands.
  • Pour in the milk and stir until the sugar is completely dissolved. Bring the mixture to a boil.
  • Once the mixture is boiling, add it straight into the semolina mixture carefully. Mix until well combined and dissolve lumps, if any.
  • Once the mixture thickens, add the fried cashews, fried raisins, and cardamom powder. Stir until all the ingredients are well incorporated.
  • Turn the heat off and cover the pan with the lid for 5 minutes.
  • Remove the lid, stir, and pour into a steel tray. Spread evenly and let it cool.
  • Serve immediately.

Serving

Here’s how you can plate this kesari recipe. If you pour it into a steel tray, you can either cut them up into diamond or squared slices to eat easily. Alternatively, just stir and fluff it up in the pan before transferring it to a bowl to serve!
