This dry chicken curry dish originates from Southern India and is made with a combination of fennel, cumin, coriander seeds, and dried chillies to give its spicy flavour. Chicken Chukka Varuval Ingredients List

For the Chukka Varuval Masala Powder:

  • 1 cinnamon stick
  • 2 pods green cardamom pods
  • 8 whole cloves
  • ¾ tsp fennel seeds
  • ¾ tsp coriander seed
  • ¾ tsp cumin seeds
  • 4 dry red chillies
  • ½ tsp black peppercorn

For the Chicken and Marinade:

  • 1 kg chicken, cut
  • 1.5 tsp ground turmeric
  • 1 tbsp salt
  • 2 tbsp meat curry powder

Other Ingredients:

  • 2 tbsp vegetable oil
  • 4 dry red chillies
  • 1 green chilli
  • 10 curry leaves
  • 180g yellow onions, chopped
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 120g tomato, chopped
  • 1 sprig of coriander leaves

Step by Step Instructions to Prepare Spicy Chicken Chukka Varuval

  1. Roast all the spices for the masala powder in a frying pan over low heat.
  2. Crush the spices with the mortar and pestle.
  3. Marinade the cut chicken for at least one hour with ground turmeric, salt and meat curry powder.
  4. Heat the vegetable oil, and fry the dry chilli, green chilli, and half of the curry leaves over low heat.
  5. Add the chopped onion, ginger and garlic and fry.
  6. Add the chopped tomato, the ground herbs and chicken. Mix well.
  7. Cook for another 10 minutes and add the remaining curry leaves.
  8. Top with coriander leaves.

  1. Mix the 136g chickpea and whole wheat flour, 1/4 teaspoon baking soda and salt in a bowl. Slowly pour enough water to make a runny batter.
  2. Heat a griddle, pour half a cup of the batter in the centre, and spread outward in a circular motion with a round-bottom ladle.
  3. Spray some oil on the edges and cook till the edges are brown.
  4. Remove and enjoy with the chicken varuval.
