Steamed Fish Recipe

Steamed fish is a classic dish often found in restaurants and many households. You can even happily enjoy the sauce with rice alone! It is an easy to make and healthy dish enjoyed by all ages. Try out this steamed fish recipe at home! After a long day at work or school, it will leave you warm and cosy inside with its familiar taste of home.

Ingredients

  • 1 white fish (we recommend seabass, cod, or grouper)
  • 1 2-inch ginger
  • 1 stalk of scallion
  • 15ml of Shaoxing wine
  • 30ml of oil
  • 30ml of soy sauce
  • 15ml of water
  • 4g of sugar
  • Ground white pepper to taste
  • Sesame oil to taste
  • 1 bird's eye chilli

  • 1 large plate
  • 1 large steamer
  • 1 small saucepan

Steamed Fish Recipe

Directions

  • Rinse your fish and pat it dry with paper towels.
  • Peel and cut your ginger in half. Slice one half and set the other half aside.
  • Cut your scallion in half. Cut one half into 2-inch pieces and set the other half aside.
  • Place the fish on a large plate and spread the sliced ginger and scallions beneath and on top of the fish – this helps to remove any fishy scent.
  • Pour the Shaoxing wine on the fish.
  • Steam the fish for 10 minutes.
  • Carefully remove the sliced ginger and scallions and drain the excess water.
  • Continue to steam the fish for another 10 minutes.
  • Pour your oil into a small saucepan and heat it slightly over medium heat.
  • Pour the oil over the fish. Be careful not to overheat the oil as you don’t want the hot oil to cook the fish further.
  • Add your soy sauce the same saucepan, stir on low heat and add water.
  • Add sugar, ground white pepper, and sesame oil to the sauce. Let it simmer, and once it boils, turn off the heat.
  • Pour the sauce over the steamed fish.
  • Julienne the bird’s eye chilli and the ginger and scallions you set aside earlier and garnish the steamed fish with them.

The Critical Point in Making a Good Steamed Fish

The most crucial factor in making a good, steamed fish dish is using fresh fish. In a steamed dish, the taste of an old fish will stand out more, compared to a heavily seasoned dish where its taste can be covered. So, when choosing your fish, make sure the fish is firm and springs back from your touch. It should not be soft and squishy. Also, keep an eye out for its gills; it should not be slimy. Finally, choose the ones with clear and bulging eyes and avoid the ones with sunken and cloudy eyes.
