Ingredients

  • 400g of boneless and skinless chicken thigh, cut into small pieces

For marinade:

  • 15ml of soy sauce
  • 12.5g of sugar
  • 7.5g of cornflour

For Kam Heong sauce:

  • 7.25g of curry powder
  • 15ml of dark soy sauce
  • 15ml of soy sauce
  • 15ml of oyster sauce

Other ingredients:

  • 30ml of cooking oil

For aromatics:

  • 70g of shallots, thinly sliced
  • 10g of dried shrimp, soaked in water and minced
  • 4 cloves of garlic, minced
  • 3 red chillies, seeded and chopped
  • 3 sprigs of curry leaves, stems removed

  • 1 large frying pan or wok
  • 1 large plate

Directions

  • Marinade the chicken in soy sauce, sugar, and cornflour in a large bowl for 1 hour.
  • Combine the curry powder, dark soy sauce, soy sauce, and oyster sauce in a small bowl to make the Kam Heong sauce. Set aside.
  • Heat the cooking oil in a frying pan or wok over medium heat and add the chicken and cook until lightly charred.
  • Transfer the chicken onto a plate and add the aromatics: sliced shallots, dried shrimp, minced garlic, chopped red chillies, and curry leaves into the pan or wok.
  • Stir-fry until fragrant, add the chicken and the Kam Heong sauce. Stir-fry until the chicken is cooked.
