If you grew up watching the all-time favourite Disney movie, Ratatouille, there has to be a point in your life when you wish you could try this heavenly-looking French dish. The characters in the film show no exaggeration because ratatouille is exactly as delicious as they portray it to be. Since you don’t actually need to be a world-class chef to cook up this meal, try making this dish with our ratatouille recipe.

Ingredients

  • 180g of tomato paste
  • ½ onion, chopped
  • 4 cloves of garlic, minced
  • 4 tbsp of olive oil
  • 180ml of water
  • ½ tsp of salt
  • ½ tsp of black pepper
  • 1 eggplant, trimmed and sliced thinly
  • 1 zucchini, trimmed and sliced thinly
  • 1 yellow squash, trimmed and sliced thinly
  • 1 red bell pepper, cored and sliced thinly
  • 1 yellow bell pepper, cored and sliced thinly
  • 1 tsp of fresh thyme leaves
  • 3 tbsp of mascarpone cheese

  • 1 10x10-inch baking dish
  • Parchment paper

Ratatouille Recipe

Directions

  • Preheat the oven to 190°C.
  • Spread tomato paste on the bottom of the baking dish.
  • Sprinkle the chopped onion and minced garlic, stirring in 1 tablespoon of olive oil and the water until well combined. Season with ¼ teaspoon of salt and black pepper.
  • Arrange the eggplant, zucchini, yellow squash, red and yellow bell peppers alternatively and slightly overlapping, starting from the outer edge of the dish and working towards the centre.
  • Drizzle the remaining olive oil and season with ¼ teaspoon of salt and black pepper.
  • Cover the top with parchment paper fitted to the baking dish.
  • Bake in the oven for 45 minutes.
  • Remove from the oven and garnish with fresh thyme leaves and dollops of mascarpone cheese over the top. Serve immediately.
