Our Pani Puri recipe is a delicious and healthy Indian street food you can easily make at home! No matter the season, Pani Puris are the most popular snack across India and have many versions. Pani Puri consists of fried, hollow dough balls stuffed with boiled potatoes, onions and spicy, tangy water. With so many flavours in one bite, it is impossible to have just one!

Ingredients
For the Pani Puri stuffing:
2 to 3 potatoes, peeled and chopped
1 onion, chopped finely
1 tbsp coriander leaves, chopped
1 tsp roasted cumin powder
1 tsp chaat masala powder
¼ tsp red chilli powder
Salt to taste
For the Pani:
125g mint leaves, chopped
250g coriander leaves, chopped
1 2cm ginger, chopped
2 to 3 green chillies, chopped
1 tbsp tamarind
4 tbsp sugar
1 tsp roasted cumin powder
1 tsp chaat masala powder
80ml water for blending
235ml water to be added later (add water according to the consistency you want)
Salt to taste
1 tbsp boondi
Other Ingredients:
24 to 30 store-bought puris

1 large pot
1 knife
1 small bowl
1 blender

Directions
Making the Pani Puri stuffing:
Boil the potatoes in a large pot till they are cooked, peel the skin and chop them into pieces.
Mix the potatoes, onions, coriander leaves, cumin powder, chaat masala powder, red chilli powder and salt in a small bowl. Set aside.
Making Pani:
With a blender, blend the mint leaves, coriander leaves, ginger, green chillies, tamarind, sugar, roasted cumin powder, chaat masala powder, and 80ml of water.
Add the 235ml of water into the blended mixture slowly until you achieve your desired consistency.
Transfer the green Pani to a large bowl. Add salt to taste.
Add the boondi and chill the Pani in the fridge.
Assembling Pani Puri:
Lightly tap the top of eachPuri with a spoon to form a hole.
Add two to three teaspoons of the filling into the Puri.
Stir the Pani first and add it to the Puri.
Serve immediately.
Tips for the Perfect Pani Puri
Our Pani Puri recipe is simple and easy to make. You can also make it your own by adding your favourite ingredients to the stuffing, like boiled white chickpeas, Ragda and steamed moong sprouts. Here are some cooking tips for the perfect Pani Puri:
Add one more green chilli to make the Pani hot and spicy.
If your Puri is soft, lightly roast them in a pan until crispy.
Use fresh herbs. Avoid using the stems of the mint leaves, as they can make the Pani bitter.
