Ingredients
2 tbsp of ghee
1 onion, sliced
3 cloves of garlic, minced
1 green chilli, sliced
1 cinnamon stick
1 star anise
3 cloves
3 cardamoms
2 pandan leaves, knotted
2 tbsp of tomato paste
360g of basmati rice, washed and drained
360ml of water
120ml of coconut milk
2 tomatoes, chopped
Cilantro, finely chopped
Pistachio nuts, chopped
Equipment
1 skillet
A rice cooker
Directions
In a skillet over medium heat, melt the ghee.
Add the onions, garlic and green chillies. Sauté until fragrant.
Add the cinnamon stick, star anise, cloves, cardamoms to lightly toast.
Add the pandan leaves and tomato paste, and sauté.
Remove the skillet from the heat and set aside.
Combine the basmati rice, water, coconut milk, and the toasted spices in a rice cooker. Set the rice cooker’s setting to cook.
Once the rice is cooked, fluff it up before stirring in the chopped tomatoes.
Garnish with chopped cilantro and pistachio nuts and serve immediately!
