Nasi lemak, or coconut milk rice is Malaysians’ favourite dish of all time. While traditionally eaten as breakfast, our nasi lemak recipe is good to be eaten any time of the day! The delicious nasi lemak is the representative dish of Malaysia, binding the community and promoting harmony in diversity.

Ingredients

For rice

  • 500ml coconut milk
  • 500ml room temperature water
  • 1.25g ground ginger
  • 1 (approximately 1.25cm) piece fresh ginger, peeled and thinly sliced
  • Salt to taste
  • 2 whole pandan leaf
  • 500g rice, rinsed and drained

For 'sambal'(sauce)

  • 10ml vegetable oil
  • 1 medium onion, sliced
  • 3 cloves garlic, thinly sliced
  • 3 shallots, thinly sliced
  • 10ml chilli paste
  • 120g white anchovies, washed
  • salt to taste
  • 15g white sugar
  • 60ml tamarind juice

For garnish

  • 4 eggs, boiled, peeled, and cut in half
  • 1 cucumber, sliced
  • 250g raw peanuts, fried until lightly browned
  • 120g white anchovies, fried until crisp

  • Wok or skillet

Nasi Lemak Recipe

Directions

For rice

  • Add rice, coconut milk, salt, ginger, ground ginger, pandan leaves, and water to your rice cooker. Cook rice.

For 'sambal'

  • In the wok, heat up the vegetable oil. Once heated, add the onion, garlic, and shallots; cook until fragrant for about 2 minutes.
  • Next, pour in your chilli paste, and cook for 10 minutes while occasionally stirring to prevent it from getting burnt. If needed, you can add a bit of water to the paste (if the paste is too dry).
  • Add the anchovies, salt, sugar, and tamarind juice for about 5 minutes. Let the sauce simmer till it thickens.

For garnish

  • Dish up your nasi lemak with your preferred garnish like eggs, peanuts, cucumber, and anchovies. Feel free to add any garnish of your choice.
  • You can also add your favourite protein, such as chicken, squid, or prawn. A popular option would be fried chicken which pairs well with the richly flavoured nasi lemak.
  • Serve warm and enjoy!
