Ingredients

  • 30g unsalted butter
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 200g Cremini mushrooms
  • 400g white mushrooms
  • 800ml vegetable stock or chicken stock
  • 200ml full-fat creme
  • 1/4 teaspoon salt
  • 1/8 black pepper
  • 2 stalks of parsley
  • 3 slices of bread

Mushroom Soup Recipe

Directions

  • Cut the mushrooms into 4 slices and dice into 4 pieces.
  • Melt butter in a large pot over medium heat. Add garlic and onion, and cook for about 3 minutes or until softened.
  • Add mushrooms and cook for 8-10 minutes, but not until brown. Stir regularly.
  • Add vegetable stock, salt and pepper, and bring to a boil. Then lower the heat to medium and simmer for 15 minutes without a lid.
  • Add cream and simmer for another 5 minutes.
  • Transfer the soup to a blender and blend until completely smooth. Do in batches if necessary. Remember to remove the cap from the feeding hole in the blender lid.
  • Once blended, transfer back into the pot and simmer for another 2 minutes to ensure the bubbles subside and the soup is hot.
  • Garnish with chopped parsley and serve with bread for dunking.
