Ingredients

  • 250g of sweetened red bean paste
  • 250g of sweet rice flour (mochiko)
  • 1 tsp of green tea powder (matcha)
  • 250ml of water
  • 70g of white sugar
  • 125g of cornstarch, for rolling out the dough

  • 1 microwave-safe bowl
  • 1 whisk

Mochi Recipe

Directions

  • First, wrap the red bean paste in aluminium foil. Once wrapped, place the paste in the freezer for at least 3 hours.
  • Meanwhile, combine sweet rice flour and green tea powder in a microwave-safe bowl. Then, whisk water and sugar. Mix the ingredients thoroughly and cover the bowl with plastic wrap.
  • Next, cook the rice flour mixture in the microwave for 4 minutes. Remove the bowl, stir the mixture, and cook for another 15 to 30 seconds.
  • After 3 hours, remove the red bean paste from the freezer and divide the paste into 8 equal balls. Set aside.
  • Dust your work surface with cornstarch.
  • Next, while still hot from the microwave, roll the dough into balls and flatten them. In the centre, put 1 frozen paste ball for each dough ball. Carefully pinch the mochi over the red bean paste and ensure the paste is completely covered.
  • To prevent sticking, sprinkle the mochi with more cornstarch and place it seam side down in a paper muffin liner to prevent sticking.
  • Serve with hot tea.
