Ingredients

  • 400g of Pontiac potatoes, peeled
  • 1 small onion, grated
  • 1 egg yolk
  • ½ a stalk of fresh chives, chopped
  • Salt to taste
  • Pepper to taste
  • 40ml of vegetable oil

Hash Brown Recipe

Directions

  • Preheat the oven to 140°C.
  • Parboil the peeled potatoes in salted boiling water for 8 to 10 minutes in a large saucepan. Drain and set the potatoes aside to cool. When they are cool to the touch, pat the potatoes dry with paper towels to remove excess moisture.
  • Next, grate the potatoes coarsely into a large bowl with the box grater.
  • Then, add the grated onion, egg yolk, and chopped chives. Season the mixture with salt and pepper. Mix well and shape the mixture into 8 patties.
  • Pour the oil into a frying pan, heat it over medium heat, and place 2 -3 patties inside. Let it cook for 6 – 8 minutes on each side without turning. Do not turn before it’s cooked, or it will fall apart. Both sides should be golden brown and crispy.
  • Meanwhile, prepare a plate lined with paper towels.
  • Place your freshly fried hash browns on the prepared plate. The paper towel will absorb excess oil.

Handy Tips for the Perfect Hash Browns

  • Before parboiling the potatoes, soak them in water to release some starch – this will avoid any rawness in the hash browns.
  • If you want really crispy hash browns, dry your potatoes by squeezing them instead of patting them with paper towels.
  • Use a non-stick pan! It gives the hash browns an even golden-brown colour.
