Ingredients
400g of Pontiac potatoes, peeled
1 small onion, grated
1 egg yolk
½ a stalk of fresh chives, chopped
Salt to taste
Pepper to taste
40ml of vegetable oil

1 large bowl
1 frying pan

Directions
Preheat the oven to 140°C.
Parboil the peeled potatoes in salted boiling water for 8 to 10 minutes in a large saucepan. Drain and set the potatoes aside to cool. When they are cool to the touch, pat the potatoes dry with paper towels to remove excess moisture.
Next, grate the potatoes coarsely into a large bowl with the box grater.
Then, add the grated onion, egg yolk, and chopped chives. Season the mixture with salt and pepper. Mix well and shape the mixture into 8 patties.
Pour the oil into a frying pan, heat it over medium heat, and place 2 -3 patties inside. Let it cook for 6 – 8 minutes on each side without turning. Do not turn before it’s cooked, or it will fall apart. Both sides should be golden brown and crispy.
Meanwhile, prepare a plate lined with paper towels.
Place your freshly fried hash browns on the prepared plate. The paper towel will absorb excess oil.
Handy Tips for the Perfect Hash Browns
Before parboiling the potatoes, soak them in water to release some starch – this will avoid any rawness in the hash browns.
If you want really crispy hash browns, dry your potatoes by squeezing them instead of patting them with paper towels.
Use a non-stick pan! It gives the hash browns an even golden-brown colour.
