For those who have a sweet tooth, this traditional fruit cake could be your new favourite dessert! Moist, filled with a variety of dried fruits, and nuts for an extra crunch, they’re typically served during Christmas, but you can also get them all year round at your local bakeries. Ingredients

  • 226g of butter
  • 45g of molasses
  • 100g of brown sugar
  • 175g of raisins
  • 200g of dried cranberries
  • 180ml of water
  • 228g of flour
  • 1 tsp of cinnamon powder
  • 1 tsp of ground allspice
  • 1 tsp of ground ginger
  • ¼ tsp of ground nutmeg
  • 1 tsp of baking powder
  • ½ tsp of salt
  • 1 orange, zested
  • 1 lemon, zested
  • 3 eggs
  • 200g of prunes
  • 100g of dates
  • 75g of chopped pecans

  • 1 7x8-inch baking pan

Fruit Cake Recipe

Directions

  • In a saucepan over high heat, add butter, molasses, and brown sugar.
  • Toss in the raisins, dried cranberries, and water, and bring it to a boil. Stir constantly for 5 minutes.
  • Remove from the heat and set aside.
  • In a separate bowl, add flour, cinnamon powder, ground allspice, ground ginger, ground nutmeg, baking powder, salt, and the orange and lemon zest. Mix until well combined.
  • In a separate bowl, crack the eggs and whisk.
  • Back to the soaked fruits, add in the prunes, dates, and chopped pecans. Stir to mix.
  • Add in the eggs and stir.
  • Lastly, add in the flour mixture and mix until a batter forms.
  • In the greased baking pan, pour the batter in and tap the baking pan against your workspace to remove any air bubbles within.
  • Bake in the oven at 160°C for 1 hour and 25 minutes.
  • After the timer is up, remove it from the oven and set it aside to cool completely.
  • Unmould the cake, transfer it to a serving platter and cut it to serve.

If you’d like to make the perfect fruit cake recipe, here are a few notes to remember when you’re in the kitchen. It’s best to let the fruits soak for at least a day before baking the cake. After mixing all the ingredients and cooking them in the pot, cover and set at room temperature for 24 hours. Once the fruit cake has been baked, it’s best to serve the following day. The flavour and texture of the cake will improve over time.
