Egg tofu is a type of tofu that’s silky smooth and has an eggy flavour. It’s an absolute favourite at Chinese restaurants! Make it yourself with this egg tofu recipe. This egg tofu recipe features ground pork and soft eggplants simmered in a warm and smooth sauce that’ll leave you warm and cosy. Pair it with a bowl of rice, and you’re set.

Ingredients
230g of egg tofu
9.4g of corn flour
2 Chinese or Japanese eggplants
15ml of soy sauce
7.5ml of oyster sauce
4ml of sesame oil
177ml of water
75ml of chicken broth
Canola oil for frying
45ml of water
7g of corn flour
2 cloves of garlic, minced
150g of ground pork
1 stalk of green onion, chopped

1 frying pan
1 small bowl
Directions
Cut the egg tofu into 2cm thick slices and place them on paper towels for 5 minutes on each side.
Pour corn flour on a plate and cover each side of egg tofu slices in corn flour. Set them aside.
Cut the eggplants into strips and soak them in salted water in a large bowl for 15 minutes. Drain the eggplants and pat them dry with paper towels.
Prepare the sauce. Mix the soy sauce, oyster sauce, sesame oil, 177ml of water and chicken broth in a medium bowl. Set aside.
Pour the oil into the frying pan, heat it over medium heat, and add the eggplants. Stir fry the eggplants for 8 to 10 minutes or until they soften. Remove from the pan and set aside.
Pour oil again into the frying pan, covering the bottom of the pan, and heat it over medium heat. Gently place the corn flour-covered egg tofu slices and fry them until each side is golden brown. Remove the tofu slices from the heat and lay them on paper towels to absorb excess oil.
Mix 45ml of water and 7g of corn flour in a small bowl.
After cleaning the frying pan, pour about 15ml of oil into it and heat it over medium heat.
Add the minced garlic and stir fry until fragrant. Add in the ground pork and separate it into bite-size pieces. Continue to cook until the pork turns brown.
Add in the sauce and bring it to a simmer.
Next, gently pour in the corn flour mixture and mix well. Bring it to a boil, and it should be thick and smooth.
Lastly, add the fried egg tofu, eggplants, and chopped green onions. Gently mix until everything is covered in the sauce.
Egg Tofu with Alternative Ingredients
Feel free to swap out some of the ingredients with what you like! For instance, you can substitute ground pork with ground chicken or beef and switch the eggplant with other vegetables like green peas or carrots. If you’d like an extra kick, you can top it with slices of red chilli too. You’re welcome to serve your egg tofu on a hot plate too! Remember to heat the hot plate on the stove and brush it with cooking oil.
