Egg Tart Recipe

Portuguese egg tarts are incredibly popular in Malaysia. They’re widely available at just about any local confectionery stores or even in the bakery sections of supermarkets. In each bite of a Portuguese egg tart, you’ll taste the flaky, buttery puff pastry with creamy egg custard in the centre, which makes them irresistible. There’s nothing better than homemade pastries, so here’s how you can make them with our egg tart recipe.

Ingredients

  • 1 sheet of puff pastry
  • 70g of heavy cream
  • 70g of sugar
  • 3 egg yolks
  • 1 ½ tbsp of cornstarch
  • 200ml of fresh full-fat milk
  • 1 tsp of vanilla extract

  • 10 pastry shells
  • 1 bowl
  • 1 whisk
  • 1 double boiler
  • An oven
  • A wire rack

Egg Tart Recipe

Directions

  • Lay the puff pastry on a flat surface and cut it out, following the size and shape of the pastry shells.
  • Grease the pastry shells before fitting the puff pastry into the mould. Leave them to firm up in the freezer while preparing the custard.
  • Combine the heavy cream, sugar, egg yolks, cornstarch, and milk in a bowl. Whisk until well incorporated, and the mixture is lump-free.
  • Prepare a double boiler over medium-low heat and cook the mixture. Stir consistently until it thickens.
  • Remove from heat and place it in a cold water bath to stop it from cooking further.
  • Pour in vanilla extract and mix until well combined. Let it cool.
  • Preheat the oven to 250°C.
  • Fill the puff pastry shells with the custard until three-quarters full.
  • Bake the pastry in the oven for 5 minutes or until it begins to puff.
  • Turn the temperature down to 200°C and continue baking for another 20 minutes or until the custard’s bubbling subsides. Remember to rotate the tray for even cooking.
  • Remove from the oven and cool on a wire rack. Serve immediately!

Authentic Egg Tarts

Although this egg tart recipe calls to use ready-made puff pastry sheets, you can always make the pastry from scratch for a more authentic taste. While they’re extra work and can take up more time, the final taste of the end product is definitely worth it. Give it a go if you’re up for a challenge.
