Claypot chicken rice is smokey and aromatic, served with moist and succulent chicken. It is a really hearty and warm dish you can enjoy for lunch and dinner. You can easily find it at your local kopitiam, but with this claypot chicken rice recipe, you’re free to add on or substitute whatever you like. Read on below to check out the recipe!

Ingredients
4 chicken thighs
1 1-inch ginger
30ml of oyster sauce
15ml of dark soy sauce
30ml of light soy sauce
2 cloves of garlic, minced
4g of cornflour
30ml of rice wine
6g of salt
1.2g of ground white pepper
12.5g of brown sugar
5 dried shitake mushrooms
1 Chinese sausage
15ml of oil
155g of long-grain rice
710ml of chicken stock
Half a stalk of spring onion
Equipment
2 large bowls
1 large wok
1 large claypot with a lid
Directions
Debone the chicken thighs and cut them into bite-size pieces.
Peel and julienne the ginger.
In a large bowl, marinate the chicken with oyster sauce, dark soy sauce, light soy sauce, garlic, cornflour, rice wine, ginger, salt, pepper, and brown sugar. Set aside for 30 minutes.
Soak the shitake mushrooms in warm water for 20 minutes.
Slice the mushrooms and the Chinese sausage.
Heat the oil in a large wok and stir fry the marinated chicken for around 1 minute.
Add the sliced mushrooms and Chinese sausage, and stir fry it for another minute.
Transfer everything from the wok into a large bowl and set it aside.
After washing the rice, place the rice and chicken stock in the claypot and place it on the stove over medium heat with the lid on.
Bring it to a boil, then immediately lower the heat to a simmer. Let the rice steam for 15 minutes.
Spread your marinated chicken over the rice and cover the claypot again. Let it steam at low heat for another 15 minutes until the chicken is cooked.
Meanwhile, chop your spring onions into small pieces.
Stir the claypot’s contents and garnish it with spring onions.

Garnishes for claypot chicken rice don’t have to be just spring onions. You’re welcome to add coriander, fried garlic, and fried shallots too. What’s more, you can adapt this claypot chicken recipe to your preference and use a mix of chicken parts. Feel free to add chicken wings, breasts or any other parts you like.
