Ingredients
10 tablespoons salted butter (melted)
250g granulated sugar
2 eggs
2 teaspoons vanilla extract
100g all-purpose flour
30g cocoa powder
230g chocolate (semi-sweet)
Equipment
8-inch square baking dish
Parchment paper
1 microwave-safe bowl
1 large bowl
1 electric hand mixer
Directions
Preheat the oven to 180°C.
Line the baking dish with parchment paper.
Chop the chocolate into medium-sized chunks.
Melt half of the chocolate chunks in the microwave in 20-second intervals. Set aside to cool.
Mix the butter and sugar in a large bowl using an electric hand mixer.
Then, beat the eggs and vanilla extract for about 2 minutes until the mixture is well combined.
Whisk in the melted chocolate and add the flour and cocoa powder. Carefully fold the batter to avoid overmixing.
Fold in the chocolate chunks and transfer the batter to the baking dish.
Bake in a preheated oven for 20-25 minutes. Once baked, set aside to cool completely.
Slice and serve with a nice cup of coffee.
Brownie tip
It can be quite hard for most of us to tell when brownies are ready to come out of the oven. A good tip is to use a toothpick and stick it into the centre of the brownie and pull it out. A wet batter on the toothpick indicates your brownie needs more time to cook, whereas moist crumbs on the toothpick mean it is done.
