Chicken Rendang Recipe

Ingredients

For the spice paste:

  • 6 shallots
  • 2cm of galangal
  • 3 stalks of lemongrass, white part only
  • 4 cloves of garlic
  • 2cm of ginger, peeled
  • 10 dried chillies, seeded

Other ingredients:

  • 80ml of cooking oil
  • 1 cinnamon stick
  • 3 cloves
  • 3 star anises
  • 3 cardamom pods
  • 600g of boneless and skinless chicken thigh or breast, cut into cubes
  • 1 lemongrass, white part only, cut into strips and pounded
  • 236ml of coconut milk
  • 236ml of water
  • 5 kaffir lime leaves, bruised
  • 24g of toasted grated coconut
  • 12.5g of sugar
  • Salt to taste

  • 1 large skillet with lid

Chicken Rendang Recipe

Directions

  • Blend the shallots, galangal, lemongrass, garlic, ginger, and dried chillies in a food processor to make the spice paste. Blend until smooth.
  • Heat the oil in a skillet over medium heat, add the spice paste, cinnamon stick, cloves, star anise, cardamom pods, and stir-fry until fragrant.
  • Add the chicken and lemongrass to the skillet and stir well.
  • Add the coconut milk and water and simmer it over medium heat while stirring frequently. Simmer until the chicken is cooked.
  • Add the kaffir lime leaves and toasted coconut. Stir well. Set the heat to low and simmer the dish with the lid on for 30 minutes.
  • Add sugar and salt to taste.
  • Serve immediately.

Chicken Rendang Tips

Make your dish heartier by adding vegetables such as chayote or water spinach. If you enjoy saucy dishes, you can make your chicken rendang saucier by adding more water and coconut milk. However, remember that adding coconut milk will reduce its spice level, so you might want to increase the number of spices to balance it out. Lastly, you can make chicken rendang in a pressure cooker or instant pot! Remember to constantly stir the rendang to prevent the bottom from burning as it caramelises quickly.
