Ingredients

For curry paste

  • 2 stalks lemongrass, thinly sliced
  • 4 cloves garlic, minced
  • 2 shallots, peeled and finely chopped
  • 5g ginger, minced
  • 10g curry powder
  • 2.5g ground turmeric

For curry

  • 2 tablespoon oil
  • 8 chicken parts (preferably thighs, skin-on
  • 3-4 small-sized potatoes, peeled and quartered
  • 1 cinnamon stick
  • 2 star anise pods
  • 375ml coconut milk
  • 125ml chicken stock
  • Salt and sugar to taste

  • Large dutch oven

Chicken Curry Recipe

Directions

  • Using a mortar and pestle, crush lemongrass, garlic, shallots, and ginger. For this step, you can also use a food processor, but we recommend mortar and pestle for a richer and more authentic Malaysian taste.
  • Add in curry powder, turmeric, and 2 tablespoons of oil. Thoroughly coat the chicken parts with the curry paste. Set aside and let marinate for at least 30 minutes.
  • Next, heat another 2 tablespoons of oil, fry the chicken, skin side down, until golden in a large dutch oven. Flip the chicken skin side up and add the potatoes. Stir in the remaining ingredients (coconut milk, chicken stock, cinnamon stick, and star anise
  • Lower the heat and let it simmer for 1 hour
  • Enjoy soft and tender chicken curry with a plate of warm rice.
