For cake

  • 4 large eggs
  • 310ml vegetable oil
  • 500g white sugar
  • 10ml vanilla extract
  • 500g all-purpose flour
  • 10g baking soda
  • 10g baking powder
  • 750g grated carrots

For frosting

  • 125g butter softened.
  • 230g cream cheese, softened
  • 1kg confectioners sugar
  • 5ml vanilla extract

Directions

For cake

  • Preheat the oven to 175°C. Prep your pan with grease and flour.
  • Next, beat together eggs, oil, white sugar, and vanilla extract in a large bowl. Then, combine flour, baking soda, and baking powder.
  • Once well-mixed, toss in the carrots and stir. Pour into the prepared pan
  • Bake for 40 to 50 minutes, or conduct a toothpick test (poke the centre of the cake with a toothpick; if the toothpick comes out clean, then the cake is done).
  • Let cool for 10 minutes. Transfer the cake onto a wire rack.

For frosting

  • Combine butter, cream cheese, confectioners sugar and vanilla in a bowl.
  • Beat the mixture until smooth and creamy.
  • Frost the carrot cake. Slice and serve.
