Ingredients
Caramel
70g granulated white sugar
50ml water
Custard
400ml milk
60g granulated white sugar
3 large eggs

1 small saucepan
1 bowl
4 ramekins (or custard cups)
1 pot
1 spatula
1 bowl
1 whisk
1 sieve or strainer
Aluminium foil
1 pan
1 knife
Directions
Caramel
Place the sugar and water into a small saucepan over medium heat.
Bring it to a light boil, occasionally swirling the mixture in the pan until it caramelises and browns.
Turn off the heat, pour the caramel equally into 4 ramekins and set it aside.
Custard
Add the milk and sugar into a pan over low heat, using a spatula to stir until the sugar dissolves.
In a bowl, crack the eggs and whisk lightly.
Combine the milk with the eggs, whisking the mixture gradually.
Sieve the custard using either a sieve or strainer.
Divide equally into the 4 ramekins and cover with aluminium foil.
Heat approximately 750ml to 1000ml water in a pan and gently place the ramekins in, cooking over high heat
Bring it to a boil, turn the heat down to low, and place the lid over the pan.
Leave it to simmer for 5 minutes.
Turn off the heat and leave the pan closed for 15 minutes.
Take the ramekins out of the pan and allow them to cool down.
Once cool, refrigerate for at least an hour.
When ready, scrape the sides of the ramekin with a knife to loosen the caramel custard pudding and serve on a plate.
Extra garnishes
Caramel custard puddings are great on their own, but if you’d like to elevate the taste and add a different element to it, garnish the top with berries for an extra kick!
