One of the most popular prawn dishes in Malaysia has to be the butter prawn. The prawns are cooked in butter, giving off a fragrant and savoury scent while stir-fried with aromatic curry leaves. Not to mention, the grated coconut adds another dimension of flavour to the dish. Try out this butter prawns recipe! Ingredients
400g of prawns
6g of salt
20g of corn flour
15ml of oil
42.5g of salted butter
3 cloves of garlic, finely minced
3 sprigs of curry leaves
1-2 bird's eye chilli, pounded (optional)
18g of oyster sauce
15ml of Chinese cooking wine
4g of sugar
3 pinches of ground black pepper
28.5g of roasted grated coconut
Equipment
1 pair of scissors
1 large bowl
1 frying pan
1 roll of paper towels
Directions
Prepare the prawns by cutting off the eyes and legs with scissors and removing the veins, leaving the head and shell on.
Rinse the prawns with cold water and dry them with paper towels.
Next, marinate the prawns with salt and coat them in cornflour in a large bowl.
Pour the oil into a frying pan and heat it over medium heat.
When the oil is hot enough, fry the prawns until the shells turn white but are not fully cooked.
Remove the prawns from the pan and set them aside.
Remove the leftover oil and start melting the butter in the frying pan. Add the garlic, curry leaves (without the stem), and bird's eye chilli. Stir-fry for one minute
Add the prawns, oyster sauce, Chinese cooking wine, sugar, black pepper, and roasted grated coconut.
Cook over high heat for one to two minutes and stir frequently.
Plate it and serve immediately.
