225g unsalted butter, room temperature
200g cake flour or all-purpose flour
1 tsp baking powder
½ tsp salt
200g sugar
4 large eggs
1 tsp vanilla extract
60ml milk
Equipment
1 9x9-inch non-stick baking pan
1 sieve
1 electronic stand mixer
1 silicone spatula

Directions
Preheat the oven to 190°C
Lightly grease the baking pan with some butter.
Combine the flour and the baking powder with a sieve. Add in the salt and mix well. Set aside.
Beat the butter and sugar with the stand mixer for about 3 minutes. Add in the eggs, beat for 1 to 2 minutes after adding each egg.
Scrape down the sides with the silicone spatula. Add in the vanilla extract, prepared flour mixture and milk. Mix well.
Pour the cake batter into the baking pan and bake for 50 minutes. To prevent the top of the cake from burning, wrap the top of the baking pan with aluminium foil.
When the cake is ready, remove it from the oven and set it aside for 5 minutes. Serve while warm.
How to Store Butter Cake
Our butter cake recipe is best when taken fresh out of the oven or at room temperature. For leftovers, you can wrap it with aluminium foil or cling wrap to keep it moist. Butter cake does not have to be refrigerated, and it can last for up to 3 days at room temperature. Before eating, microwave the cake for a few seconds to warm it up.
