The burnt cheesecake has grown tremendously popular over the years. Its bold flavours and richness set it apart from its alter ego, the classic New York-style cheesecake. Intentionally burnt for a crisp and cracked bitter outer layer, the centre is creamy, smooth and will just melt in your mouth. Simply the easiest cheesecake to bake, this burnt cheesecake recipe is beginner-friendly and fail-proof.

Ingredients
600g of Philadelphia cream cheese
200g of granulated sugar
4 eggs
300g of heavy cream
30g of all-purpose flour
Equipment
1 stand mixer
1 sieve
1 spatula
1 8-inch springform
Directions
Preheat the oven to 230°C.
In the bowl of the stand mixer, add in cream cheese.
Set the mixer to medium speed and gradually add in the sugar.
Add in the eggs one at a time and let the mixer combine all the ingredients thoroughly.
Reduce the speed of the mixer to low and carefully pour in the heavy cream.
Once everything is combined, turn the stand mixer off.
Remove the bowl from the stand mixer and sift in the flour with the sieve.
Fold the mixture gently with the spatula.
Once the batter is ready, pour it into the springform.
Reduce the oven temperature to 210°C and bake for 50 minutes.
Once the cheesecake is puffed and caramelised on the top, remove it from the oven.
Let it cool down completely before chilling it in the fridge for 4 hours to let it set.
Once the cheesecake is set, remove it from the springform, cut and serve.
