Every Malaysian’s favourite dessert, bubur cha cha, is a delicious and vibrant medley of sweet potatoes, yam, and sago in a creamy coconut milk base. While you can customise it to include other popular ingredients such as black-eyed peas, bananas and tapioca, nothing beats our version of the bubur cha cha recipe.

Ingredients
80g of tapioca flour
1.3l of water
Red food colouring (for the jellies)
Green food colouring (for the jellies)
140g of taro, diced
140g of sweet potatoes, diced
40g of sago
160g of sugar
3 pandan leaves, knotted
250ml of coconut milk
¼ tsp of salt

1 bowl
3 pots
A steamer
1 sieve
Directions
In a bowl, combine tapioca flour and 50ml of boiling water to form a dough.
Divide the dough into two and add red and green food colouring to each half accordingly.
Flatten the dough and cut them into bite-sized pieces.
In a pot, bring 500ml of water to a boil and add the dough pieces. Cook until translucent.
Transfer them to an ice bath and set them aside.
Prepare the steamer and steam the diced taro and sweet potatoes for 20 minutes.
In another pot, bring another 500ml of water to a boil and cook the sago until translucent.
Use a sieve to drain the water from the sago. Transfer to an ice bath and set aside.
In a separate pot over medium heat, add the remaining water, sugar, and pandan leaves. Stir to mix.
Add the coconut milk and salt.
Add in the red and green tapioca jellies, sago, steamed taro and sweet potatoes. Simmer on low heat for 10 minutes.
Serve immediately.
Hot or Cold
Depending on your preference, you can serve this bubur cha cha recipe cold or warm. Serve it immediately after cooking for a hearty dessert, or chill it in the fridge for 3 hours for a more refreshing feel.
