Ingredients
170g small bitter gourd
1¼ tsp salt
2 tbsp vegetable oil
3 large eggs, beaten
¼ tsp ground pepper
Equipment

1 wok or frying pan
Directions
Cut bitter gourd with a knife half lengthwise and scoop out the seeds with the spoon. Cut the bitter gourd into thin slices at a diagonal angle.
Transfer the bitter gourd slices into a bowl. Sprinkle 1 teaspoon of salt, mix, and leave to sit for 20 minutes. Rinse and squeeze out the water from the bitter gourd. Pat dry with a paper towel.
Heat vegetable oil in a wok or medium fry pan. Add the bitter gourd and stir fry until lightly brown.
Pour in the beaten egg. Sprinkle the remaining salt and ground pepper over the eggs and bitter gourd.
Stir the eggs until they are cooked.
Serve immediately.
