Banana cake is the perfect snack—you can have it throughout the day, as a quick sweet treat after meals or even for breakfast, and it all just works! It’s healthy, tasty, and easy to make. If you’ve got extra overripe bananas lying around in your kitchen, here’s how you can recreate our banana cake recipe.

Ingredients

  • 1 tsp of butter
  • 200g of overripe bananas
  • 120g of all-purpose flour
  • 1 tsp of baking powder
  • 3 large eggs, room temperature
  • 100g of powdered sugar
  • 100g of unsalted butter, melted

  • 1 loaf pan
  • Parchment paper
  • 2 bowls
  • 1 sieve
  • 1 stand mixer
  • 1 spatula
  • Aluminium foil
  • Wire rack

Directions

  • Preheat the oven to 190°C.
  • Grease the loaf pan with butter and line with parchment paper.
  • In a bowl, mash the overripe bananas and set aside.
  • In a separate bowl, sieve the flour and baking powder then set aside.
  • In the bowl of the stand mixer, add the eggs and beat on medium speed for 1 minutes. Turn it up to the highest speed and beat for another 2 minutes.
  • Once the beaten eggs is bubbly, add sugar and continue for another 3 minutes. The mixture should now be foamy.
  • Add the mashed bananas into the stand mixer bowl and use a spatula to mix.
  • Add half of the melted unsalted butter into the mixture, gently folding with the spatula.
  • Divide the flour into 3 parts, add ⅓ and gently fold. Repeat with the other ⅓ of the flour.
  • Add the remaining butter, stir, and add the remaining flour.
  • Gently fold all the ingredients together but do not over mix it. The batter should retain air bubbles.
  • Transfer the cake batter into the pan and bake for 45 minutes. 20 minutes into baking, cover the top with aluminium foil.
  • Once the timer is up, remove the banana cake from the oven, cool it on a wire rack for 10 minutes. Cut into equal pieces and serve.

Frosting on top

This classic banana cake recipe is great on its own, but if you’d like to level it up, whip up cream cheese frosting and slather on top! All you’ll need is cream cheese, butter, sugar and vanilla essence! If you’ve got all of the above, throw and mix them in a bowl, then spread it over your cake. Refrigerate it for 30 minutes to let it set and serve.
