250g of unsalted butter, softened to room temperature
250g brown sugar
2 large eggs, beaten
5 very ripe bananas, mashed
5ml vanilla extract

Directions
Preheat your oven to 177°C. Prep your loaf pan by lining it with parchment paper and spraying the inside with cooking spray.
Next, thoroughly mix flour, baking soda, and salt in a large bowl.
In another bowl, whisk together butter and brown sugar until smooth. Add in the eggs one at a time and stir.
Add vanilla extract and mashed bananas. Stir again.
Pour the banana mixture into the flour mixture. With a spatula, gently stir until no more dry flour is visible.
Spoon the batter into the prepared loaf pan.
Bake for 50 to 60 minutes. To check if your banana bread is done, do a simple toothpick test: insert a toothpick into the centre of the bread, and if it comes out clean, then your bread is done.
Cool for at least 10 minutes, and enjoy!
