Every Malaysian’s favourite street food is apam balik. It comes in two varieties: the most common version is thick and fluffy, suitable for those who enjoy dense desserts, while the other is thin and crisp. In a bowl, combine all-purpose flour, self-rising flour, sugar, baking soda, salt, dry yeast, vanilla extract, egg, and warm milk. Whisk until smooth.
Cover the bowl with cling wrap and rest for 30 minutes in a warm area.
Once the batter has doubled in volume and is foamy, whisk again before using.
In a non-stick pan, spread butter over the entire surface.
Ladle 190ml of the batter into the pan and use the back of the ladle to swirl and spread it evenly. Cover with the lid and cook for 3 minutes.
Remove the lid and add your toppings! Spread a light layer of unsalted butter, sprinkle the sugar and add the chopped roasted peanuts and creamed sweet corn.
Cover the lid again to allow it to cook thoroughly.
Remove the lid and use a spatula to run through the edges to release it from the pan. Repeat with the rest of the batter and toppings.
Fold the apam balik in half and serve immediately!
