About 450g spaghetti
75ml high-quality olive oil
8 large garlic cloves, thinly sliced
Salt to taste
Optional: red pepper flakes and fresh parsley for seasoning; shredded parmesan for serving

Directions
In a large pot of salted boiling water, cook the spaghetti until just shy of al dente (about 1 minute less than the package instructions). Then, drain and set the cooked spaghetti aside. Make sure to reserve about half a cup of pasta water.
Meanwhile, combine olive oil and garlic in a large sauté pan. Stir until garlic is lightly browned over medium heat. Add in parsley and red pepper flakes, if using.
Dump pasta to the pan along with pasta water and increase heat to high.
Continue to constantly stir and toss until a creamy, emulsified sauce coats the noodles. Top with shredded parmesan, and serve right away.
